I read about the endgame on sensei's library and to be honest it is super confusing. What counting method should I use in practical games? Miai counting does not take tedomari into account and is highly confusing with it's 31/32 points. So annoying this endgame. It would be so nice for there to be a simple counting method in all cases. And is it even posssible to take tedomari into account in practice? By practice I mean in like 30 sec.

I think deiri counting (where you count the full swing) is probably the easiest. It's certainly the method that made sense first to me. That said, you should probably have an idea of the value of common situations so that you don't have to calculate them during the game. Situations you'd describe as "common" depend on rank of course :P.

Since you have posted this in the beginners section, may I suggest that for beginners the most important thing to study about the endgame is neither evaluation nor tedomari, but shortage of liberties. :)

For a start, round all endgame values to integers! Play the sente! Avoid neutral regions!

As for using tedomari in practice, yes it's possible but obviously the depth of endgame anaylsis you can make in limited time will increase as you get stronger. If you want to be able to practice playing a good endgame with calculating the size of moves, finding tedomari etc without being rushed I would recommend playing on a turn-based server such as OGS. When I play yose there I take tedomari into account.

I think those two are very helpful for beginners:
