7 is a normal move. indeed usually followed by one of the variation you showed.
The variation I played is one of my personal favorite joseki's in which I know how to trick hight level opponents
that is the reason I played it.
I think my kosumi's to the center, saving the cutting stones might have been bad.
I thought I could not just give cutting stones away. but something like below might have been better.
What do you think ?

29: I thought about hane here, but thought I should not push white to my weak center stones.
But maybe white can not attack since he is still cut himself. I was not sure and decided

It also solves the problem with the D11 stone which ended up way too heavy.
Once black is strong on the bottom O3 is indeed a nice honte move that solidifies blacks position.
