The fuseki below has been played by professionals many times. Its early moves revolve around a well-known joseki in the top right, and that joseki is the focus of my question.

My question is: What is the purpose of playing the :b27: - :w30: exchange for black? I don't really see what benefit this exchange offers.

Besides maintaining the ordenary eyespace and endgame option Q18, Black looks for a chance to get S10 and T16 with the idea of White T13 - Black R12 to create an approach liberty problem. IOW, R18 is not quite as alive as White would like it to be.
