I thought that part of the theory of double komoku was to pincer when approached...

To black's high approach, attaching underneath is by far the most common professional move, with ~750 hits in my version of GoGod (ignoring black's corner moves). Attaching on top and playing the two space high pincer are also popular, at ~130 each.
